While I do sometimes buy the young Thai
coconuts at my local natural foods store and deal with the struggle that is opening them, I generally find it is way easier to
just open a can of
organic coconut milk.
Don't
just settle for the first brand of
coconut milk you might find in the baking aisle — also check the international foods aisle as
coconut milk is very popular in a lot of Asian dishes, as well as the natural /
organic aisles of your grocery store.
My favorite hot drinks: hot water with lemon juice, hot water with apple cider vinegar, Traditional Medicinals
organic Every Day Detox dandelion tea, Guayaki Yerba Mate Chocolatte, or Guayaki Chai Spice Mate, both
just plain or with a splash of lite canned
coconut milk.

just wanted to add that the

coconut milk I buy is in BPA free cans.
I
just made these with raw
organic coconut sugar and added 2 or 3 Tbs of almond
milk for the wetness.
I also tried using a full mug of

I mostly use the Full Fat canned
organic USDA certified
coconut milk in recipes but there are times that I
just need the plain thinner
milk and this might be a easy solution.
You can find some good choices in a jar or a can, such as
coconut milk which should contain
just coconut milk and water, or plain
organic peanut butter such as Arrowhead Mills Crunchy
Organic Peanut Butter which contains
just one ingredient:
organic dry roasted peanuts.

Just tried this this morning with unsweetened
organic coconut milk and all I can say is omgish!!!!.
They're completely dairy - free: The creamy vanilla inside is made from
organic coconut milk,
organic agave syrup, and
organic vanilla extract and beans (the beans add that incredible fresh vanilla taste that'll have you drooling), and the smooth chocolate coating is made from
just organic cocoa butter and
organic cocoa powder.
