I thought about stuffing some shells with
just pea pesto, but I thought that would be a little intense, and I'd also miss my good old vegan cashew - tofu ricotta that I love so much in recipes like this.

Hi Ella, Are you blending / processing the 3/4 cup of
peas into the
pesto sauce so that the
peas become pureed too or are you
just mixing them in without pureeing them?
Scallions gave the
pesto more flavor and dimension than
just garlic alone while lemon and Pecorino added a distinct zip to the
peas.
