just made this superfood bread, another divine recipe I
just had a
slice with mashed avocado and
cherry tomatoes.
Their is
just such a wonderfully diverse range of flavours and textures, from the crunchy
slices of raw courgette, to the juicy
cherry tomatoes and the toasted pine nuts.
Ingredients about 1/4 cup olive oil 1 onion, thinly
sliced 2 cloves garlic, chopped One 14 - ounce can white beans, drained 1 egg 1/2 cup fresh breadcrumbs * 1 tablespoon freshly ground Parmesan juice of half a lemon 1/2 teaspoon thyme, broken up with your fingers 1 scallion, thinly
sliced 1 1/2 tablespoons masa harina (
just use flour if you don't have masa on hand) Salt and pepper to taste 1/4 cup pesto, homemade or store - bought 1 ripe
tomato (use sundried or
cherry tomatoes if you can't find a good roma or heirloom) about 1/2 cup Roasted Eggplant Spread (recipe follows) 3
slices whole grain bread
For the veggies and dip
just choose 2 - 4 different types of veggies -LCB- carrots, celery,
cherry tomatoes,
sliced cucumbers, etc -RCB- and find a fun dip at your local grocery store -LCB- this one is a spinach and kale -RCB-.
I've used
slices of granny smith apples,
cherry tomatoes, grapes, mini peppers, sweet baby pickles, etc... The options are endless —
just opt for little items that are able to be eaten in one bite and can be picked up with either a toothpick or your fingers without causing a mess.
