It's probably lacking in the spice / heat department (although the
salad dressing contains garlic) but other than that, we have the sweet (honey in dressing), savoury (dandelion greens / avocado /
kale / pecans) and sour (
citrus dressing and grapefruit covered), making for one fully palette - balanced meal!
Acidic ingredients, such as vinaigrette dressings and
citrus, go very well with
kale salads, as do Parmesan cheese, avocado, shredded raw Brussels sprouts, mango, apple, pear, pumpkin seeds and pine nuts.
Some studies have shown that just 100 milligrams of ascorbic acid increased iron absorption by 4.14 times; all the more reason to dress your
kale salads with a
citrus dressing.
Citrus Salad with Currants and Goat Cheese (I would make this a bit simpler — just some spinach /
kale, mandarin oranges, walnuts, fancy cheese, and maybe a homemade orange dressing.)
