Add in 1/4 cup of water, cover, and let
kale cook for 5 minutes, stirring occasionally.
For this recipe, I used baby kale because I made it on a weeknight and baby
kale cooks in a snap.
I only added a tiny amount of water though to the kale and garlic and let is simmer on very low heat covered
till kale cooked enough.
Or,
kale cooked down in miso, mirin, and soy sauce with a soft - boiled egg, scallions, and furikake (Japanese rice seasoning) on top.
For the immuno - stimulatory effects of kale

While we can not be certain about the exact times and percentages here — and we are clearly in need of further food science studies in this area — the glucosinolates in kale may be especially sensitive to total cooking time and this sensitivity may need to be factored in when choosing
a kale cooking method.
