My
cake baked
in 30 minutes (may have been due to the dark
pans) so
keep an eye on it if you make it.
Any surplus crab
cakes will
keep for 24 hours
in the fridge before you need to get them
in a
pan.
The
cake in the 10 ″ -
pan will have less height, so it might require less time; just
keep an eye on the
cake around the 50 - 60 min mark.
If made an hour or so
in advance, it can be inverted on the serving platter, and left with the
cake pan over it, to
keep it warm.
(Note: They help
keep the sides of the
pan cool, allowing the sides and top of the
cake to rise at the same speed, resulting
in a level top.)
But if you'll be baking layer
cakes regularly, you should
keep multiple
pans in different sizes on hand.
You can also use a larger
pan keeping in mind the
cake will be shorter
in height.
Note: Using a smaller
cake pan will result
in a longer baking time; adjust accordingly and
keep an eye on the edges; if it browns too much while the center is still wet, wrap edges
in foil; or if you are using a smaller
pan, try placing it inside a warm water bath as Dorie Greenspan suggests.
The
cake can be eaten warm or cool from the
pan, or cooled, wrapped tightly
in plastic, and
kept for 2 days.

cake to be easily removed from the
pan and
keep all the layers
in place.
