I have made these cookies 6 or 7 times over the past few months, but I kept forgetting to take a picture of them so I could post the recipe.

To keep this recipe vegan, I highly recommend Melissa Joulwan's Egg-less Homemade Mayo, although we often use her original homemade mayo recipe which she shared in this Healthy Lunchbox post back in 2012.
I am going to try modifying the recipe in a healthier version using coconut oil, agave & honey, oatmeal, walnuts... I will keep you posted.
