Let me ask, as Im
doing lots of
kefir, water
kefir, and your apple sauce
recipe is again right up my alley, so I was curious once you add the water
kefir to the apple sauce
recipe, it essentially consumes all the sugars, making it safer for people with blood sugar issues, similiar to when you secondary ferment water
kefir adding fruit juice, and it consumes the sugars still, or the organisms
do.
When I strain my
kefir through cheese cloth, can I use the thick part that doesn't strain through for the yogurt portion of this
recipe?
Our local honey is pretty flavorful, so it may be cutting the whey taste, although my son
did ask if I made these with
kefir grains As a side note, we've been making fudge pops 1 - 2x per week since you posted the

After some trial and error (lots of error actually), I finally have a
recipe I like, though I
do rest the
kefir grains in regular dairy milk every few batches to keep them strong.
It's not your typical cookbook, but she
does include
recipes for homemade bone broth and
kefir smoothies, which are both known to help heal the gut.
My REAL Ranch dressing
recipe contains none of those but
does contain awesome probiotics from
kefir, creme fraiche, and fermented homemade mayo.
Since
kefir is so tart, a lot of people don't like to drink it straight but instead use it as a main ingredient in other
recipes.
In the
recipe to which I linked, the benefit of the
kefir is that it
does the work of fermenting the grain for better digestion and nutrition.

In the
Kefir Cheese
recipe — it says to leave the grains in the milk for 48 hours or more — this will both seriously weaken or kill the grains and make a very sour batch — I know because I have
done this inadvertently.
However, this
recipe by renowned chef Pete Evans doesn't use
kefir grains at all.
I
do a basic soup
recipe like this, just with dairy, since I can (butter and cream or
kefir)
