They already have the whole coin - gathering thing as the game's main attraction, yet somehow shoehorned Bowser
kidnapping Peach in there anyway.
I've long thought a good story hook for a Paper Mario entry would be that Bowser finally attends the Mario World equivalent of the U.N., only to discover that the reason he can keep
kidnapping Peach is that the Mushroom Kingdom's military is locked in a N / S Korea - style relationship with an evil kingdom on the opposite side.
Bowser appears and immediately makes a lunge for the titular Sticker Star, the MacGuffin that ends up empowering him and a bunch of other baddies who then wreak havoc off - screen (including
kidnapping Peach, of course), and Mario is tasked with defeating them both by tradition and his latest companion.

The battle system is still trash and Bowser
kidnaps Peach... for like the billionth time.
On the surface it's the same «Bowser
kidnaps Peach» story that you've seen a dozen times, but underneath it all there is more going on.
For Mario Galaxy, Bowser has once more
kidnapped Peach, this time during a festival the Mushroom Kingdom has to celebrate a comet that passes by every hundred years.
Finally, there's a Bowser stuffed toy that's pretty close to his character model, but he's lot cuddlier when he isn't trying to
kidnap Peach or continue his war with Mario.
Say the Mushroom Kingdom has become overrun or somebody that wasn't Bowser has not
kidnapped Peach and the Mario Bros can not defeat the threat by themselves; they team up with Bowser and go to save the Princess.
In Paper Mario, King Bowser once again
kidnaps Peach, this time using his castle to carry her away.
In Super Mario Bros.: The Lost Levels, Bowser
kidnaps Peach again.
When Mario arrives, a giant Bowser
kidnaps Peach, so Mario travels through the galaxies to rescue her again.
During that time, Bowser Jr. and the Koopalings bring a cake into the castle and
kidnap Peach.
He also
kidnaps Peach and the local Toads, sticking them with Bowser Tape.
Mario instantly becomes lovestruck, but King Koopa appears and
kidnaps Peach.
Bowser invades the Mushroom Kingdom, transforms its inhabitants into various objects, and
kidnaps Peach (then known as «Princess Toadstool») so she can not reverse his spell.
Though Bowser attacks the Mario Bros. and still attempts to
kidnap Peach directly after the Dark Star is defeated, Peach still express her gratitude toward Bowser for his role in saving the world by sending him a cake.
Bowser has repeatedly
kidnapped Peach and invaded her kingdom, both out of a megalomaniac desire to rule the world, but also because he has fallen in love with her.

Bowser has
kidnapped Peach again and is organising their wedding (more, it seems, to make Mario jealous than out of a burning desire for the Princess, but that's a can of worms we'll leave unopened for now).
However, it definitely has that Mario charm going for it, and the detour from the whole «Bowser
kidnaps Peach» storyline was refreshing.

Why do you think Bowser was always trying to
kidnap Peach?
While Super Mario Odyssey is light on story, it does hold an intriguing narrative: Bowser has
kidnapped Peach and intends to marry her, curb - stomping Mario and destroying his iconic hat along the way.
In the former game, it is shown primarily in the opening and ending cutscenes, where it is the location where the Star Festival is held, and is first shown from space when Bowser
kidnaps Peach and removes her castle from its foundation and carries them both into space, causing Mario to follow them into space as well.
