To ensure your
kimchi keeps for a long time in the fridge; press down the cabbage below the
liquid line so it does not have contact with the air.
You'll also need to make the
liquid component of the
kimchi (see notes below).
It's completely fine to make the
kimchi without the chili pepper flakes, the only mandatory part of the recipe is soaking everything in the brine (salt water) and keeping everything submerged under the
liquid.
If there is not enough
liquid in the jar to come up over the
