If you
did that, sometimes the coconut
oil comes to room temperature and then the wet mixture isn't all that wet, but
kind of thick.
This recipe is great for spring, it's light and doesn't require a heavy sauce
of any
kind because it's tossed together with fresh tender asparagus, peas, parmesan cheese, lemon zest and olive
oil and it pairs perfectly with the soft and crispy bite
of the pan-fried gnocchi.
BUT sometimes using a drop
of an
oil or an extract is worth it so much more than cramming something in a recipe that clearly doesn't belong and then trying to compensate for that with all
kinds of other ingredients, etc... I don't think thin mints were ever meant to be made with fresh mint leaves anyways
