For a
bean - laden chili (my favorite
kind), I'd actually
add a few more
beans to this — maybe a can and a half per pound
of meat.
I made it with the oddest
bean burgers that I
kind of overpulsed so I had to
add some flour to it, so they look more like «pancakes»
of sorts, but the combo
of both is incredible.
For example try using regular potatoes instead
of sweet or maybe
add zucchini and use a different
kind of bean instead
of chickpeas, there are so many options!
Didn't have any
of the traditional toppings, but
added a small amount
of French's Fried Onions before eating (the
kind from green
bean casseroles!)
Our dinner rotation is usually sauteed seafood
of some
kind with probably toast one night, some variation
of pasta with garlicky rabe another night (
adding sausage, using kale or whatever green we have, wuteva), black
bean tacos, and salad with all
of the leftover veggies and either tuna salad on top or roasted chicken.

kind of dish: feel free to
add any crunchy vegetables — think bell peppers, thinly sliced broccoli, or green
beans — you have on hand.

I used 4 cans
of sugar free red
beans from Kroger and processed two
of the cans into
kind of a chunky
bean dip texture and simmered it all in my cast iron dutch oven for just over an hour,
adding three cups
of water over that time and thickening it back down each time.
Add steamed green
beans, edamame, sautéed Brussels sprouts and every other
kind of green food you can think
of and I will confess that I love them too.
Hummus and veggies — not new or revolutionary, but a solid choice, especially if you mix things up by
adding pureed vegetables or using different
kinds of beans.
It's awesome with some avocado on top, and you can easily vary the recipe to make it vegetarian by leaving out the meat or
