Set aside for 30 minutes up to overnight at room temperature, covered with a
clean kitchen cloth.
When done, transfer the dough to a clean bowl and cover it with a piece of plastic wrap or
kitchen cloth in order to prevent the surface from drying out.
I either cover the bowl with plastic (it doesn't touch the batter) or
with kitchen cloth (no rubber band).
