Quickbreads follow the same ratios as muffins (just baked in one
large loaf instead
of many small ones)- so if you would cut down the sugar typically in a muffin, then I can see cutting down the sugar here too.

Try to find a really
large round
loaf of sourdough or Italian bread.
With the
larger pan the
loaf of course didn't rise as high, but it still looked nice and was done in 45 minutes.
