One
large pancake like this with some fruit is quite filing and only takes a few minutes to cook.

The pudding doesn't rise up
like it usually would if cooked in a Yorkshire pudding pan (or muffin tin), instead it is flat and resembling a
large pancake.

larger ones - they are more closely related to what we call «Palatschinken», which looks

pancakes and drizzled in sweet, golden honey.
Using a spatula, flatten out the potato mixture so it lays
like a
large pancake in the pan.

Pancakes: 3 large farm fresh eggs 1 cup whole raw milk 2 cups of sourdough starter (can be straight from the fridge, does not have to be recently activated... this is how I almost always make it) 1 3/4 cup all purpose flour (makes a lighter pancake, but I've made it before with spelt flour, which was also pretty tasty, but heavier than most people like pancakes) 1 tsp aluminum free baking soda 2 tsp baking powder 1 1/2 tsp pink himalayan salt (you can use sea salt) 1/4 c. granulated sugar (rapadura, sucanat, whatever floats your boat) 1/4 c. raw butter, melted (I've used organic salted butter before, works fine) Also, for more health benefits, I add about 2 - 3 Tbsp melted coconut oil, which you can use instead of the butter or just use both (I totally us

I passed it to my mom who tried to just put the dough as
large pancakes on a parchment - lined cookie sheet in the oven at 425 for 15 minutes (or 18 if you
like it crispy) and it works great too!
To serve I suggest 1 - 2
large pancakes per - person, unless your have a hungry, active husband
like Mackenzie and then you may want to serve 3 — I
like to dust the top of the
pancakes with some powdered sugar which I tap through a sieve, and then drizzle some maple syrup over the
pancakes (be generous!)
Spray a shallow 9 - inch pie dish and set aside - Crumble tofu in a
large bowl with your hands until it looks
like feta cheese - Stir in nutritional yeast, mustard, onion and garlic powder, turmeric, plus salt and pepper until well combined - Mix in veggies - Transfer mixture to pie dish and pat down firmly with a spatula until nice and tight - Bake for 20 - 25 minutes until the top is firm and slightly brown - Let frittata cool for 5 minutes on the counter before serving - Place a dish over top and quickly, but gentle, flip frittata out Blueberry Spelt
