In a
large bowl, combine cornmeal, sorghum flour, brown sugar, potato starch,
baking powder, 1 teaspoon salt, xanthan gum,
baking soda and a generous
amount of pepper.
Meanwhile, in a
large bowl, whisk the flour with the
baking powder, salt, sugar, and
baking soda, and freeze the dry ingredients for the same
amount of time as the butter.
My adjustments: used 2
large loaf pans instead
of 3,
baked for 55 min, used original
amount of baking powder (1 Tbsp) and cake came out perfectly, no sinking center.
