Optional: Place bottom of baking dish in
a larger pan filled with hot water so it's easier to cut out the squares.
When I've done it I've put the muffin tin in
a larger pan filled with water.
Weight it with
a large pan filled with water (I used a Le Creuset 5 - quart Dutch oven) and walk away for a while.
