As with
last year when I did a week
of Christmas cookies, and posted Snowball Cookies, Chocolate Stuffed Cookies, and
Ricotta Cookies, I'm in the midst
of a week
of Christmas treats here!
Repeat 2 - 3 times, top the
last layer with the rest
of the vegetables, the tomato sauce, the lemon -
ricotta and the grated mozarella cheese.
After I spread a little
of the vegan «
ricotta» on the cracker and topped it with a mound
of the salsa, I had one
last flash
of inspiration.
ive been making this for the
last year, even hubby who hate cauliflower loves our cauliflower pizza... i personally use one cup
of cauliflower, 1/4 cup
of eggbeaters, 1/4 cup
of ricotta cheese, 1/4 cup
of mozzerella cheese, italian seasonings and mix up.
Place a layer
of noodles on top
of the
ricotta mixture, spread with the remaining
ricotta mixture, and sprinkle with another 1/4 cup
of mozzarella cheese before placing the
last layer
of noodles on top.
The zucchini pizza I first made
last summer, but this time used
ricotta instead
of goat cheese.
Last night I trialed the savoury zucchini cheese cake, but using cottage cheese instead
of ricotta, the family were fighting over the left over slice!
