I made these last night as a bit of
a late pancake day and they were delicious however I really struggled to get them to cook through in the middle.

Sorry — it's
late here, I've been up since 4:15 and I just drove all the way across the state after a full
day of work so to take care of my nine mile long wedding to - do list (no really, the thing is comically long)-- my sense of propriety and decorum for discussing dead animals along side a epically delicious
pancake has gone completely out the window.
Also since today is
Pancake Day and I just know that I will indulge
later on... I am hoping that posting a super healthy savoury recipe will go some way to in re-addressing the balance.

days later, my
pancakes didn't look the same.
With
pancake day just around the corner (February 13th — you're welcome) I thought it would be rude not to start whipping up unacceptable amounts of
pancakes and these 4 ingredient protein
pancakes of buckwheat banana and blueberry are my
latest breakfast / snack obsession.
Needless to say those potato
pancakes were terribly unhealthy and were full of processed «white» food and hydrogenated oil... AND to this very
day (about 15 years
later) there is still massive Crisco oil stains on the driveways where we fried them!!!!!
These fluffy
pancakes can be whipped up in a matter of minutes and any leftovers make a great snack for
later in the
day.
Avoid the
pancakes, bagels, and waffles as they only lead women to snack more
later on in the
day.
A few
days later, I had (not low - carb)
pancakes for breakfast, and was again sleepless that very night; it didn't take a few
days for the benefits to «wear off».
