I don't like Bleu
Cheese so I subbed
Laughing Cow Light Swiss and added a little dry ranch.
There are some good alternative low fat and fat free
cheese sources, such as
laughing cow light, alpine lace and Jarlsberg lite, but unfortunately at the end of the day nothing really taste the same, so live a little... well just a little, 1 oz every now and then to be precise.

The muffins did taste good toasted and dressed up with some
laughing cow light spread, which emulated cream
cheese frosting!
(sigh) I also put ranch dressing in it, and since my kid doesn't like blue
cheese, used mozzarella
