My only complaints - minor at that - are that it could have been a bit more flavorful (maybe some more spices on the chicken, maybe some diced green chilies in the sauce) and the
top layer of tortilla seemed a little dry after I ran out of sauce.
So, I came up with the idea to chop the whole tortillas into pieces, which means the ingredients in the pan can now meet up with each other during the baking process instead of being separated
by layers of tortilla.
Cans of black beans and tomatoes make this dish quick and easy, but the
crunchy layer of tortilla chips covered with bubbly cheese are what make it your family's next favorite.
But this Southwest - inspired vegetarian version, which is made by
stacking layers of tortillas and filling, will knock you out in a different way — with bright colors, crunchy bites, and smooth avocado.
I think having the cheese layered in with the other ingredients would make it much tastier, as the
top layer of tortillas isn't really necessary and holds the cheese up away from the rest of the casserole.
Layers of tortillas, chicken, black olives, salsa, and cheese make up this delectable casserole with a cream cheese sauce to meld it all together.
Lay down
layer of tortillas.
Cover with a single
layer of tortillas and layer all ingredients again ending with a top layer of tortillas, sprinkle remaining cheese and then a layer of tomatoes.

(The casserole will not be too saucy because too much sauce causes
the layers of tortillas to breakdown.)

My adjustments: Made it as a casserole dish (3
layers of tortillas, baked with foil on top and then removed foil for additional 5 - 10 minutes to finish melting cheese); added 1 can of rinsed / drained black beans; used half low - fat sour cream and half fat free greek yogurt as that's all I had; used about 1 1/2 c of Mexican cheese in filling and the rest on top (no cheddar); omitted green onions as I wanted to freeze it.
Using the same baking dish that you roasted the veggies in, prepare the casserole by spreading a thin layer of the salsa along the bottom, then cover with
a layer of tortillas.
Spread refried beans over
the layer of tortilla strips.
Once you get
the layer of tortillas down, add 1/2 of the egg mixture right on top.
I only did 3
layers of tortillas, yet in this cross view it looks like I have at least 6!
Top with with
a layer of tortillas, enchilada sauce, vegetables / beans, and cheese.
Add
a layer of tortillas, to completely cover the bottom of the pan.
Place
a layer of tortillas, then chicken mixture, then onions, then non-dairy cheese.
This was good except next time I make it, I'm going to leave off the last (top)
layer of tortillas, layering the cheese in between the first two layers of tortillas along with the beans and the meat mixture.
Form
