Some people have a custom to eat
leeks on the Jewish Holiday of Rosh Hashana, so a dish containing both apples and leeks is a perfect addition to the upcoming holiday.
I made spelt pasta in a a class and wanted to use it fresh but
no leeks on hand.
I imagine this sounds terribly repetitive today, when, upon short perusal of recipes and a few shrewd clicks, you can have ingredients for Thai green curry on Monday, Korean bulgogi on Tuesday, Parisian glazed salmon with
leeks on Wednesday....

Arrange

(Note, when I have
leeks on hand, I LOVE to saute the leeks in goat milk butter, and then mix them into the waffle batter!)
Now slice
the leeks on the diagonal and place in a large plastic bag and chill until ready to use.
I could easily eat a bowl of
these leeks on their own, but adding them to a dish of fried polenta is totally worth those few extra steps.
My husband has been so excited that I cooked this, since I put
leeks on the shopping list, and he got «extra help» to figure out what that was in the produce aisle.
In each dish, sprinkle half
the leeks on the bottom, followed by half of the vegan cheese and pour half of the batter on top.

You could substitute tender, sautéed

on hand: slices of raw red onion instead of
leek or red pepper instead of mushrooms.

This tasty soup is my lighter twist
on the classic
leek and potato combination.
Leeks are grown in sandy soil, so if you don't soak them, you'll be gnawing
on grit, and that's not cool.

You can use whatever spring vegetables you have
on hand -

Heat a large cast iron pot
on medium heat and add oil and add the
