I always use
a left over ham bone so I usually have a lot more ham in my soup than the recipe.
You can use
left over ham or turkey in this dish instead of chicken, making it a great dish to make with holiday leftovers.
Will be keeping the recipe and always making your Ham & Bean soup with
any left over ham bones / ham.

I saute a diced onion & a cup or so of celery, incl
leaves, in grape seed oil, add garlic (quite a bit) 1/4 tsp cayenne pepper, two bay
leaves, two tsp balsamic vinegar, one scant tsp sugar, 1/2 c chicken stock, 1/2 c water, one cup diced
ham, & the greens and cook it slow in the oven and eat it
over rice, for two days.
Stir in some leftover Easter
ham or rotisserie chicken to repurpose
left overs.
The only change I would make to this dish is I would
leave the English muffins whole and arrange the
ham and green onions on top of them and pour the egg mixture
over and around them.
Sounds wonderful and I too, have
ham left over after having several dinners and making
ham salad for sandwhiches.This recipe will be Fridays dinner.
Ingredients: 1 each onion diced 3 each garlic cloves minced 1 each smoked
