I thought I would incorporate
leftover toppings from last night (black beans, chives, peppers ad jalapeños) and mixed in some
cooked veggies and viola a whole new dish is born.
The ingredients can be mixed up but you want
veggies that will hold up to sitting and marinating in the fridge for a while so it's usually a combination of onion, pepper, zucchini, carrots, cucumber, cabbage, celery and mushrooms in whatever quantity I have on hand plus a can of beans or
leftover cooked beans but I'm usually in a hurry so it's canned!
Frozen
veggies, oatmeal (you do it just like the rice, blend up the dry oats before
cooking), fruits that I'd be cutting up for the older kids, chicken, sweet potatoes or squash that I was
cooking for dinner,
leftover veggies from dinner, whatever.
It is also great to
cook huge amounts of rice and can be further utilized to manage
leftover rice by adding a little garnishing in the form of peas or other
veggies.
Turn
leftover veggies into something eggs - traordinary — just pop them into a small, ovenproof dish, pour in a couple of beaten eggs, top with grated cheese and
cook in the oven at 375 deg F, until the eggs are completely
cooked and the cheese is golden.
With a 1/4 cup of this Asian - Influenced dip, start your day dipping all the fresh /
cooked veggies or
leftover meats you like.
Now, my contribution is useful for using up
leftovers — extra
veggies, extra
cooked grains, extra bites or bits of meat, or the last few eggs in the carton — but it is doubly effective at promoting conservation, because many of these «extras» are in my fridge because I purposely
cook more than I need.
Use
leftover cooked pearl barley with lentils,
veggies, and seasonings for a hearty main - dish burger sans the bun.
Adding
cooked veggies (such as
leftover roasted
veggies) would work perfectly.
Whenever I
cook, I always make huge batches to last me through the week, so I use my microwave quite a bit to heat up the
leftovers or to thaw
veggies for a quick side dish or something like that.
