I decided recently that I'd make a hummus using
roasted pumpkin seeds along with chickpeas and some
leftover squash puree.
** Alternately you could use
leftover roasted / mashed
squash or frozen pureed butternut
squash.
I like using up
leftovers with eggs... anything from

squash to lentil soup.
Instead of the wheat berries called for in this recipe, use
leftover cooked barley from Monday's dinner to add texture to a salad of mustard greens, arugula, and tender

Veggies 8 cups of veggies, roughly chopped (I used broccoli, pepper, zucchini and
leftover butternut
squash) 2 tbsp of sundried tomatoes, sliced Combine the veggies with the prepared
roasted garlic sauce and place in an 8 × 8 pan and bake at 350 for 30 minutes.
For this recipe I have used
leftover butternut
squash but you can also use
leftover roasted peppers, sweet potatoes or beetroot.

Ooh how lucky, I just
roasted an enormous spaghetti
squash this weekend and have tons of
leftovers!
Beef burgers, house burgers and «Wahlfaves» include Donnie's choice, the BBQ Bacon Burger, available as a turkey or beef burger and described as a «spiced - up weekend barbecue on a bun,» topped with white cheddar cheese, bacon, avocado, fresh jalapeños and barbecue sauce; Mark's choice, the Thanksgiving Day, «like Thanksgiving
leftovers on a bun,» made with fresh ground seasoned turkey, stuffing, Paul's orange - cranberry sauce,
roasted butternut

In this photo we used onions and spinach, but you could easily add sliced shiitake mushrooms, sliced zucchini,
leftover roasted winter
squash, or thinly sliced broccoli.
My favourite variety is acorn
squash,
roasted in the oven with some olive oil and garlic, so we often seem to have
leftovers in the fridge around this time of year.
I made this for myself in my Mr. Bento set with
leftovers from lunch the night before:
roasted cherry tomatoes, banana bread, clementine wedges, a lamb chop, rice pilaf and butternut
squash soup.
This time, it was
leftovers from the night before, which was spinach,
roasted delicata
squash, and pomegranates.
