cake topping, use the pulp to make passion fruit bar cookies (just like
lemon bars), or flavor my cream cheese frosting for my carrot
cake with passion fruit pulp.
instead make a sugar /
lemon juice /
lemon zest glaze, puncture holes into the
cake whilst it's still a bit warm then drizzle the glaze over, it will absorb the liquid and dry to a glossy, transparent finish on
top.
I have my mother's recipe for gingerbread with
lemon sauce, but have never thought to
top the
cake with caramel sauce.
Or you can fill the
cake with a half recipe of
lemon curd (in which case you'll only need two - thirds of the frosting to cover the
top and sides of the
cake).
I have always preferred chocolate desserts but this
cake is as good as a chocolate one:) You can make a
lemon glaze
topping though for me it seemed sweet enough and sprinkled only some powdered sugar on
top.
I did not know exactly what to do with it though so I made a vanilla
cake and put it between the layers and
topped it with vanilla icing and
lemon rind much like you were going to do.
