This refreshing Thai
lemongrass soup is made with a light gingery broth, pan-fried tofu, cherry tomatoes and fresh cilantro.Alissa's note: I originally published this one back in December of 2014, and just updated the photos and recipe.
I made
the lemongrass soup and it was divine - I found the honey slightly overwhelming (we have pretty strongly flavoured honey here in Australia!)

I was planning on a simple
soup for lunch, standing in the produce aisle, examining some veggie or other, when seemingly out of nowhere, my senses were overtaken by star anise,
lemongrass, ginger.
I just made this tonight, and it turned out great though I wasn't able to do the recipe word for word — couldnt add the anise or
lemongrass (budget is tight) and I also only have a 1qt
soup pan, so what i did was just boil the tomatoes and the vegetable broth and corn startch, saute the onion and red pepper, then when they were all hot threw the rest in my crock pot for about 4 hours... and it turned out great!
In a large
soup stockpot add the chicken broth, chile pepper, jalapeño,
lemongrass, red curry paste, ginger, garlic, lime leaves and heat to boiling.
Aida's take on tom kha gai, a Thai coconut
soup, has chunks of tofu, snow peas and Thai basil floating in the
lemongrass - and ginger - infused broth.
Before serving the
soup you may want to fish out the
lemongrass and the chunks of ginger, or you may be brushing up on your Heimlich maneuver.

I have a great butternut squash
soup recipe we love, BUT this looks SO good, especially with the addition of
lemongrass!
To try out my new blender, I decided to make a basic butternut squash
soup and change it up with some
lemongrass, Indian seasonings, and coconut cream instead of heavy cream.
* late note: to keep the flavor of
lemongrass etc in the
soup throughout the week, keep the extra flavoring pieces in, fishing them out just before serving.

As with other Southeast Asian cuisines, such as Burmese, Cambodian, Laotian, and Thai,
lemongrass and galangal are often used in aromatic
soups.
Modifications: — i pretty much doubled everything — got 3 stalks of
lemongrass (the large ones in produce section, not the tiny packaged ones)-- used crimini mushrooms (if you can't find shiitake)-- added one bell pepper (in inch squares)-- couldn't find the lime leaves so I added 1.5 quartered limes at the time you're supposed to add the leaves (NOTE: TAKE THESE OUT As soon as it's done simmering otherwise the lime skins will keep «leaking» and make the
soup too bitter - I made this mistake but tasted the
soup at the end of simmering and it was perfect then)
I did not have
lemongrass but I did add 1 tsp of curry powder during saute of onions and squash to try to replicate a
soup I had at Mustard's in Napa.
