A blintz is basically a crepe filled with slightly sweet and lemony ricotta filling (in our case, vegan cream cheese and tofu in place of ricotta) and often topped with a fruit compote.
I first serve a selection of fruit and berries, then a Potato Basil Frittata filled with ricotta, gruyere cheese and eggs, accompanied by applewood cured bacon rubbed with rosemary and steamed asparagus with a lemony hollandaise sauce.
