While some of my kids could subsist quite happily
on mac and
cheese and hot dogs for days
on end, there are those of us who wish to be more adventurous and a lot
less processed.
And I love putting a green veggie
on a pizza — it makes the
cheese and carbs feel a lot
less guilty, right?
Hold back
on the
cheese if you are looking for a
less calorie taxing meal.

We lean
on reduced - fat cheddar in this sandwich but add a little canola mayo to stretch the
cheese and encourage extra meltiness for a mixture that has 50 %
less sat fat than regular cheddar and saves 190 mg sodium over processed American
cheese.
* 2 slices thick cut bacon - optional (I used my preservative free home - cured bacon) * 1 small red onion, peeled and thinly sliced * 1/2 pound clean and dry organic baby spinach * 1 cup coarsely chopped pea sprouts / shoots - optional (use another seasonal vegetable like asparagus, if you prefer * 1/4 cup crumbled blue
