My suggestion would be to try it with another egg yolk, or maybe use a whole egg and follow an immersion blender mayo recipe and
let the melted ghee cool.

ghee has
melted and coated the bottom of the pan, add the garlic slices and
let them cook briefly; do not brown.
If you
let it become too hot, it'll
melt the
ghee and coconut oil when you add it to the bowl and you'll end up with a some kind of a hot soupy mess instead of a light and airy creamed concoction...
Saute for a few minutes and then add the butter or
ghee on top and
let melt over the potatoes.
