My perfect BLT
and the one I grew up eating (not that there's much of a differentiation between what you're probably used to), was simple — perfectly ripe farmer's market
tomatoes (or garden
tomatoes) dusted with a little bit of salt
and pepper
and layered with crisp iceberg
lettuce, at least four pieces of crispy bacon (flimsy bacon is a crime in my household)
and then smooched between toasted whole - wheat
sandwich bread smothered with light mayo.

We have hot chicken
sandwiches (Frank's hot sauce on the chicken, LOTS of bleu cheese on toasted whatever - bread - I - have - on - hand,
lettuce and tomato), chicken alfredo (I just add a bit of pressed garlic
and pepper to the pan when the chicken is almost done, throw in some cream, let it simmer
and reduce, then add a bunch of finely grated parm, asiago, pecorino romano, or whatever I have),
and then an absolute favorite: lemon pepper chicken on Greek Salad.
1 zucchini, cleaned
and sliced lengthwise (three slices) 1 large Vidalia onion, chopped 1 medium green
tomato, sliced into 1/4 ″ thick rounds 2 romaine
lettuce leaves, cleaned 2
sandwich size ciabatta loaves 1/4 c cornmeal 1/4 c Basil Pecan Pesto 1/4 c Veganaise olive oil vegetable oil salt pepper paper bag
Sandwich: 3 slices uncooked bacon + 1 tbsp brown sugar + 1 beefsteak
tomato, sliced + salt
and pepper + 1 tbsp mayo + 1 tsp lemon zest + 2 slices sourdough, toasted + 4 butter

Not only can you enjoy these as a perfect summer appetizer paired with Buttermilk Herb Ranch Sauce, try

Build the

Make once serve multiple ways: a few ideas include 1) slice chicken
and serve over a Cobb / Caesar salad 2) chop chicken into bite size pieces add a touch of light mayo
and chopped celery to make a chicken salad (stuff in an avocado, or wrap, or
sandwich) 3) shred chicken (with two forks)
and serve in tacos with
lettuce,
tomatoes etc..
Satisfying meat free burgers which are delicious
sandwiched between burger buns with all the toppings — sliced pickles,
tomato, onion,
lettuce, Thousand Island dressing
and mustard!
