This is an excellent
cake recipe — it produces the fluffiest,
lightest, most moist
cake ever.
What quickly became evident was that it was difficult to come up with a direct substitute and that
recipe mediation was necessary to create a tall,
light cake.
This special ingredient makes the

light and delicate and it's also perfect in other
recipes like muffins or waffles.
Anyways, I substituted almond meal in my zucchini
cake recipe, and o.m.g., I have never tasted a
