While you can blend
flavours in to the mix such as mango, chocolate or caramel I have stuck to
light vanilla bean
coconut milk and added a sinfully sticky caramel sauce, fresh banana and peanuts.
This healthy cake is a creamy, not too sweet,
light dessert, with a slight
coconut flavour.
And I used
light coconut milk, which probably cut down on the
flavour a bit.
Inspired by Asian - style
coconut rice pudding, this chia version delivers robust
flavours in every

To make this dish
lighter without skipping on creamy
flavour, I used just one quarter of a cup of soaked cashews blended in water to create an amazing creamy sauce with half the fat of a
coconut cream based version.
