While meatless
meals are great for our digestion and can make us feel
lighter than other ones, often times, meat - free dishes,
like faux soy meats, are full of processed ingredients and chemicals that make the whole vegetarian thing not so good after all!
I think this is best enjoyed as a snack, or maybe a
light meal for the rare warm summer days when we don't feel
like staying in the kitchen for more than five minutes.
I use golden flaxseeds (ground into flaxseed
meal) because I
like the
light color, but you can use brown flaxseeds as well.

I've never had it baked before but this recipe sounds
like a terrific one to start with I'm with you when it comes to eating
light on Thanksgiving — then i don't overeat during the actual
meal.
A typical full day of eating for me looks
like: Breakfast: Spinach, Mushroom, Onion and Tomato Frittata... sometimes with bacon or homemade sausage Iced Coffee with coconut milk Lunch (this is usually my largest
meal of the day): 4 - 5 ounces of protein (turkey burger, pulled pork, chicken thighs, ground buffalo), roasted veggies and sometimes a sweet potato or butternut squash Snack: apple with almond butter or a handful of macadamia nuts Dinner: A large salad with all kinds of raw veggies (cucumber, celery, carrots, cauliflower), avocado or olives, usually a
lighter protein
like grilled chicken breast, salmon or shrimp This would represent a full menu... I would say I hit this about 4 - 5 days a week, other days I may omit the snack or keep the snack and omit a
meal, if i do that though I would add a bit of protein with it.
Nothing completes a summer
meal like a
light salad with fresh ingredients.
Toss it with a healthy pasta
like a soba / kamut noodle or rice noodle, and pair it with a
light salad for a nutritious
meal.
I
like to make it in the summertime when we're looking to eat
lighter meals.

I don't recommend a substitute for coconut flour directly as it's very unique, but feel free to experiment with flax
meal, which may work but won't produce a
light and airy cupcake
like coconut flour will.
I
like it as a
