Scrape the dough onto a
lightly floured surface, then
lightly knead the dough with your hands a couple times until you have a smooth and
sticky ball (do not over knead).
Form dough into 36
balls, each about 1» wide (the dough will be very
sticky, so keep your hands
lightly oiled while working).
The dough should be soft to touch and once no longer
sticky, use the remaining flour to dust your work surface to knead
lightly until it comes together in a
ball.
If you find that initially the cookie dough is a little too
sticky to handle,
lightly flour your hands and then roll the dough into
balls.
Once combined add in remaining flour 1/2 cup at a time until the dough comes together in a
ball and is only
lightly sticky.
