arbol bring depth and a settle spiciness, then just when you think your mouth its gonna be on fire, the chile Moritas hit you with their bright, sweet spicy almost
like cherry flavor and all starts to mellows down, following by the hint of sharp garlic, salt and nutty notes from the oils.
I don't
like things awfully hot - I skipped the chipotle, cayenne and chile de
arbol and used chipotle powder to bring it up to a level I
like, and added a small fresh New Mexico.
The chiles were small, very hot, slightly round and almost heart shaped, rather than long and thin
like the chiles we call
arbols.
