I have yet to find a chocolate cupcake recipe I love (to host, as you said, the
mounds of frosting I
like to pile on each one).
My extreme fatigue might have something to do with the fact that instead of planting the corn patch in rows
like a normal person I decided to make a million giant
mounds and plant a few seeds in each
mound.
Mound by teaspoon onto a baking sheet and bake at 350 degrees for about 25 minutes, until lightly browned (
like a nice macaroon!).

Using the ice cream scoop worked
like a charm, but I suggest flattening out the
mounds a bit before baking them.
I
like the shredded zucchini and olives from Pat's version, so I included that, along with a
mound of sprouts as toppings.
Now roll each ganache
