banana bread before, but my husband has never raved
about it
like this recipe!!
Simple freeze
bananas a few hours for a shake -
like consistency, and
about eight hours or overnight for a soft serve consistency.
Baked oatmeal is almost
like a breakfast cake (one you can feel good
about) and it's super adaptable: you can add pretty much anything that suits your fancy,
like bananas, peanut butter, or even chocolate chips.

about adding

Maybe it's the warm weather or maybe I'm just dreaming
about being back on our honeymoon in St. Croix but I've been craving tropical fruits
like fresh pineapple, coconut, mango and
banana lately.

Even though I made
banana bread yesterday, I'm due to have a baby girl of my own in

That probably sounds disgusting to everyone else — I said I was picky, not that I had good taste I do love
banana soft serve, but I'm funny
about them in baked goods (must be the only person not to
like banana bread) or cooked.
While I love
banana bread and other types of cake -
like loaves there is an undeniable specialness
about kneading, proofing, and baking bread from scratch in your own home.

While I
liked that ice cream, my husband wasn't crazy

Good thing
bananas are coming down in price over here — a cyclone earlier in the year wiped out all the crops, so
bananas were
about $ 16 / kg at one stage (
like $ 2 - 3 PER
banana arrrrrrrrrrrgh!)
I will need to figure out whether to use
bananas or give plantains another try (I don't quite know what I didn't
like about them).
And back to the yummy muffins — they're so easy to make, with only 6 ingredients (+ a dash of salt) and they only take
about 5 minutes to toss together ingredients
like bananas, almond flour, and egg into a blender; mixing it up for around 15 seconds to get everything all nice and smooth.
Cranberry Orange Green Smoothie (Gluten - free, Dairy - free, Sugar - free) 1/2 of a blender of greens, loosely packed (
about 4 cups loosely packed)-- I used Trader Joe's Power Greens mix of baby kale, spinach, and chard 1 large frozen
banana 1/2 cup of unsweetened coconut milk from the carton or other nondairy milk 1/2 cup fresh cranberries 1 large orange, peeled 3 - 5 dates (depending on how sweet you
like your smoothies)-- start with 3 dates, taste, then add more if needed
When thinking
about this new recipe I thought that I do
like a cut up
banana in my oatmeal and I
like chocolate chips in my
banana bread so why not combine all of that in a fabulous recipe?
The best part
about this bread, it uses whole ingredients
like oats, brazil nuts, flax seed, dates and
bananas!
Now I think
about it, I
like my smoothies so thick, and I so rarely leave out a frozen
banana, that they pretty much all end up with the texture of ice cream!
-- Soy or Rice / Quinoa milk instead of Almond milk — Canned 100 % Pure Pumpkin instead of the
bananas — Substitute whole oats for some of the flour — Add freshly ground flaxseed and chopped nuts (I
like pecans)-- Bake in muffin tins instead of a loaf (usually takes
about 20 - 25 minutes at 350 F, I make these weekly for school snacks and they're the bomb)-- Reduce sugar to 1/2 cup for more of a snack and less of a dessert — If I'm in a hurry, I just do 6 T boiling water and 3 T cocoa powder and just mix it into the whole thing!
