like to nix the bun for some fresh tortillas or a stack of crisp lettuce, then schmear it with
pesto, stack it high with a juicy burger,
avocado, and that runny egg.
I tried
avocado pesto once and didn't
like it.
The cook rounds out the dish with diced
avocado and a homemade
pesto -
like dressing that blends together Parmesan, pistachios, and a Middle Eastern seasoning known as za'atar.
The
pesto was really yummy but
like Kelly mentioned in the beginning, since it was made with
avocado it does turn brown really easily when exposed to oxygen, so it is definitely a hard thing to store and definitely should be eaten right away.

I've never been a huge
pesto fan, but since I'm on an
avocado kick (seriously, it's
like one a day around these parts), this was right up my alley.

avocado and a jalapeno to give it some kick.

Add a healthy fat,
like avocado, or a jarred option,
like olive tapenade or an EVOO - based
pesto.
Since that's a pretty small portion of nutrients, I'll be hungry for a fuller meal 45 minutes to an hour later, at which point I'll enjoy something
