like christmas as well if you
like, cover them in «snow» using
coconut flakes coconut flour!
If you
like less - sweet cookies (
like me) err on the side of using fewer dates and a touch more
coconut flakes.
But you know me, I couldn't possibly leave well enough alone so I made a dairy - free version with extra virgin
coconut oil which got me thinking actual
coconut flakes and pumpkin seeds might be pretty amazing here too and well, don't tell Grandma, but I kind of
liked it better.
I've used agar powder /
flakes to make pseudo whipped cream or whipped cream
like icing with
coconut milk and other milk alternatives.
No you can omit the
coconut flakes if you would
like.

I
like to top mine with a drizzle of pure maple syrup, fresh fruit, and crunchy topping (nuts, cacao nibs,
flaked coconut, etc.).
Use whichever fruits you
like - here I used apple, raspberry and blueberry, but you could use pear instead of the apple, plums instead of the berries or maybe even mango for a tropical trip... combine that with some
coconut flakes in the topping!!
As far as toppings go, when I have paleo pancake parties I
like to use organic pure maple syrup, blueberries,
coconut flakes, cinnamon... and definitely a little grass - fed butter (or you could drizzle with a bit of
coconut oil if you don't eat butter).
