like we do, you'll love making this slow
cooker recipe and savoring it on those rushed and not so rushed mornings!
I don't love things that are too sweet, but I just felt
like it was a little on the very tart side and needed something to cut it; however, it could have been the
apples, so next time I make it, I will taste the filling once
cooked and add additional sugar as needed to ensure the ratio is accurate.
It's also perfect to use for
cooking fruits
like bananas or
apples, in baking or even to blend into a smoothie.
They
cook just
like regular pancakes, and the
apples soften slightly, so when you take your first bite, the
apple is slightly crisp but oh so warm and juicy.
Instead of the spongy cakes we're used to today, these layers are more
like cookies — firmer, so they slowly soften beneath liberal applications of
apple butter and
cooked apples.
Ingredients: - 6 inch medium zucchini cut into chunks - 3 cloves garlic, left whole - olive oil for drizzling - kosher salt + pepper to taste - 1/2 teaspoon smoked paprika (if you don't
like anything smoky, add regular paprika)- 1/2 teaspoon cayenne pepper, more or less depending on how spicy you want it - 2 cups of
cooked quinoa - 1 cup of panko breadcrumbs - 4 hamburger buns toasted Radicchio Slaw - 1 small head of radicchio, sliced into strips - 1/2 tablespoon mayo - 1/2 tablespoon sour cream - juice of half a lemon - 1 garlic clove minced - salt to taste Tangy mustard sauce - 1/4 cup cup of yellow mustard - 1/4 cup of grainy dijon mustard - 2 tablespoons of honey - 1 tablespoon of
apple cider vinegar - salt to taste
Directions: Peel and slice
apples (yellow transparents tend to
cook down so I made my really chunky) / Fill bottom crust half - way with
apples / Sprinkle with some of the sugar and cinnamon / Continue to fill with
apples creating a mound on top / Sprinkle with the rest of the sugar and cinnamon — I didn't use the full 1/2 cup sugar on mine because I
like it tart / Cover with the second crust, pinching the edges and cutting some slits in the top / Bake at 425 for 15 minutes and then turn heat down to 350 for another 40 - 45 minutes until golden brown.
Not to be confused with actual butter, fruit butters (
like apple butter) are spreads similar to jelly, but they use a different
cooking process.
I adapted this
apple cinnamon pancake recipe from
Cooking Light, and by «adapted» I mean I changed
like two small things and added «cinnamon» in the title.
