When we are young and healthy, our blood vessels have a consistency more
like cooked noodles.
They'll still be a bit stiff but once you marinate them in a bit of lime or lemon juice and a small pinch of kosher salt for a few hours... they look and behave
like a cooked noodle.

Personally I find it has a VERY strong flavour and I can understand what some people mean when they say it tastes
like «dirt», although I do actually
like the taste in most things (although the other day I used some of the water from
cooking soba
noodles in another recipe and it was gross!).
If they're dried
noodles like this then you should
cook them fully before using — if they're oven ready then you use them straight from the box.
While the steaks are
cooking, I
like to boil up a pot of egg
noodles or mashed potatoes.
