My definition of
chili is rather broad and includes just about any stew -
like dish, usually served as a main course, that contains
dried or fresh chiles as a dominate ingredient.
And finally, finally, I used whole
dried spices,
dry roasted them to bring out more flavor, and ground them in a mortar and pestle
like the
Chili Queens of yore.
The base sauce tasted a little too much
like sweet ketchup so I added spices including
chili powder,
dry mustard, and allspice.
In this vegan
chili recipe from Jennifer Meier,
dried pinto and black beans are cooked in a pressure cooker, along with a wonderful array of spices
like chili powder, cayenne, cumin, and even cocoa powder.
TIP: If you
like a bit of spice then stir 1/2 teaspoon smoked paprika and 1 teaspoon
dried chili flakes into the batter.
