If you don't
like grated carrots or other traditional raw food salads, you can shred a cucumber or serve crunchy cauliflower bouquets or even test new salad varieties.
It struck me as I was photographing the granita that the shards of ice crystals kinda sorta look
like grated carrots.

For packed lunches I normally make big batches of quinoa and brown rice with apple cider vinegar / lime and salt and then do a big thing of roasted veg — things
like sweet potato and squash cubes, so I throw a mix of that into a tupperwear with some raw veg — things
like avocado,
grated carrot, tomatoes and then some hummus / lentils / chickpeas / seeds for protein.
On the second day you can add seeds, grains,
grated carrots or potatoes or anything you
like.
I used fresh cut corn, grape tomatoes and sliced olives, but you might
like any of the following produce: sliced celery,
grated carrot, blanched broccoli florets, chopped bell pepper (red, green, yellow or orange!)
We
like our veggies a little bit crunchy (especially the
carrots and zucchini), so I grilled them for 20 minutes, then I sprinkled them with
grated Parmesan and put them back in the oven for another 2 minutes, but feel free to remove the pan sooner to have softer veggies.
It can be pureed fruit, fresh or frozen berries,
grated or pureed vegetables
like carrots or pumpkin.

like chunks of cheese in the dressing but if you want it smooth, feel free to run it through the blender or food processor.Another excellent use for blue cheese dressing is to mix a salad of

like chervil and tarragon tossed in as well.

I really hope you
like these muffins; the base recipe is versatile and you could substitute the
grated carrot for
grated sweet potato or pumpkin, and you can swap the feta cheese to goats cheese or small chunks of haloumi.
Like I said,
grating the apple and
carrots is an option too if your blender isn't a beast!
