I have to say that I am distressed by the «apparent» state of the science, in that, it feels
like more heat than light is being produced.
If you would
like more heat, puree the peppers and add them to the sauce.
And if
you like more heat, add more red pepper flakes to taste.
In another small bowl whisk (or handblend) the coconut milk and curry paste together (add more curry paste if
you like more heat / flavor).
Taste and add chiles de árbol to your preference (start with 4 for mild or 6 for medium heat; add additional to taste if you would

heat / Finally, stir in heavy cream, as much as you
like.
I am a self - confessed wuss when it comes to chilli
heat and 1/2 tsp of cayenne pepper is perfect for me, but if you
like it a bit hotter, start with 1/2 tsp and gradually add
more to taste.
But now, thanks to Dr. Paul Bosland of the Chile Pepper Institute, varieties
like «Bhut Jolokia» (seen above, fresh and dried, photo by Harald Zoschke) and «Naga Morich» are commonly available and are five times as hot, topping the
heat scale at an astounding one million SHU — and much
more.
Sometimes I
like more flavor than
