This one has the thinly veiled plea of being healthy by using whole wheat
pasta, and you could definitely throw in some veggies
like frozen peas, sautéed
mushrooms or thinly sliced sundried tomatoes.
I was a big fan of cheesy
mushroom pasta in my pre-vegan days; but this looks
like a delicious AND healthy alternative.
We
liked the super thin - crusted pizza (endless topping options), the pesto
pasta and
mushroom pasta, and of course, the arancini (fried rice balls served as an app).
I
like to add
mushrooms, black olives, and / or zucchini to this
pasta too, and its delicious without the cheese so you don't really need the cheese if you are watching calories!
Some
like pizza and
pasta and some
like mushrooms and oysters.
To the
pasta -
like calamari I add
mushrooms, onions, and shredded zucchini along with some spices and a splash of white wine.
Using your favorite short
pasta (I
like penne, gemelli or farfalle for this recipe), you then combine with sauteed veggies,
like mushrooms and spinach.
