other ways to use it.

You can bake, roast, mash, or puree these eating pumpkins just
like other winter
squash.

Butternut
squash and gorgonzola really
like each
other.
The flesh is sweet, nutty, and a bit drier than
other squash with a distinct corn -
like flavor.
Like most
other orange winter
squash, pumpkin is full of lutein and both alpha and beta carotene, which the body converts to vitamin A (over 200 % of your daily value in just one serving!).
Some varieties, however, can be roasted or turned into soups just
like other scrumptious winter
squash.
And I agree with Sarah, pumpkin or any
other squash sounds
like it would also be amazing in it at this time of year.
I particularly
like using these chickpea waffles in sandwiches instead of bread, especially when they're generously covered with delicious hummus (
like this cauliflower hummus or butternut
squash hummus for example) in between all the
other sandwich goodness!
Two
other popular winter
squashes include: spaghetti
squash, a small, watermelon - shaped variety with a golden - yellow, oval rind and a mild, nut -
like flavor and butternut
squash with a soft inner flesh that tastes somewhat similar to sweet potatoes.
I
like my
squash mixed in with
other things, and these were so good.
To use for a cleanse replace tomatoes with
other vegetables,
like thinly sliced fennel bulb or sautéed summer
squash.
However, I think the U.S. is on pumpkin overload and ignoring many of the
other great fall flavors out there...
like maple, sweet potatoes and pumpkin's underrated cousin delicata
squash.
What's in it: 1 medium - sized spaghetti

Other optional veggies: I added a cup of sliced white mushrooms, but broccoli, peapods, or any
others you
like would work as well 4 tablespoons Pad Thai sauce, more to taste ** 1/3 cup peanuts, chopped 1/4 cup cilantro, chopped 1 lime, cut into wedges * you could alternatively use chicken or shrimp if you're not a tofu fan ** I used a jarred pad thai sauce to save some time but check out the original recipe link above to see the full sauce recipe if you want to go homemade
You can also add in any
other seasonal vegetables
like spinach or kale, diced
squash or chickpeas.
Other great vegetables to include are celery, fennel, cucumbers, lettuces,
squash, pumpkin, sweet potato, mushrooms, snow peas, green beans and sea vegetables
like kelp.
If you have
other winter
squash you
like playing around with — butternut
squash, kabocha, etc. — feel free to use them in this recipe just the same: roast, mash, and add.
In
other words, the makings of a healthy lunch: veggie burger -
like patties, to which my various
squashes and beans would no doubt impart a hearty, packable texture.
A typical full day of eating for me looks
like: Breakfast: Spinach, Mushroom, Onion and Tomato Frittata... sometimes with bacon or homemade sausage Iced Coffee with coconut milk Lunch (this is usually my largest meal of the day): 4 - 5 ounces of protein (turkey burger, pulled pork, chicken thighs, ground buffalo), roasted veggies and sometimes a sweet potato or butternut
squash Snack: apple with almond butter or a handful of macadamia nuts Dinner: A large salad with all kinds of raw veggies (cucumber, celery, carrots, cauliflower), avocado or olives, usually a lighter protein
like grilled chicken breast, salmon or shrimp This would represent a full menu... I would say I hit this about 4 - 5 days a week,
other days I may omit the snack or keep the snack and omit a meal, if i do that though I would add a bit of protein with it.
The flavor isn't a lot different from
other winter
squash, so you'll
like it if you
like butternut!
Instead of treating spaghetti
squash like pasta, treat it
like any
other root vegetable in our scrumptiously simple vegan vegetable soup recipe.
You'll see that I chose to use a protein powder in this recipe, just
like many of my

others like to mix it all together.
I used a little of both of these varieties in this soup but you can use these or
other winter
squash that you have on hand
like «Delicata», «Butternut», «Acorn» or «Hubbard» to name a few.
As it is I just get those bisque - style soups from Pacific or any
other brand in flavors
like butternut
squash or lentil, which are 2 favorite flavors of mine.
