I like to have a tangy side dish with my meals
like pickled beets and I think this really freshens up those winter meals.
Not exact matches
If you feel
like being ever lazier and avoiding the parboil / peel / boil process of cooking the
beets, buy them pre-steamed and packaged at Trader Joes and follow only the
pickling instructions.
You can also turn to other
pickled vegetables,
like beets and other veggies that have gone through the
pickling process.
I might have to try this and see if I
like the combination enough to finally have a way to enjoy
pickled beets.

There are,
like, a million things you can make with
beets, but we especially love them for the vibrant pink color they impart to a
pickled egg.
When making them, I add a little juice from
pickled beets to color them just
like the original eggs, but you can color them yellow with ground turmeric or leave them natural.

I especially

beet eggs for when I'm traveling and need to pack filling, nutrient dense foods.

like the Spring Pea Salad with peas, cucumber, white beans,
pickled beet, toasted almond, lemon and dill or the Quinoa Polenta with black kale, turnip, miso butter and hazelnut!
Drinking probiotic beverages
like kombucha, water kefir, and
beet kavas; making and eating [daily] a portion of lacto - fermented vegetables
like sauerkraut, kimchee and
pickles and enjoying raw milk, yogurt, dairy kefir and other fermented dairy products is excellent and so very healing.
My favorite ferments include cultured vegetables
like raw kraut (I
like Farmhouse Cultures because I'm too lazy to make my own); coconut water kefir; miso paste;
pickles; kimchi; and
beet kvass.
I made an easy southern style charcuterie board with cheese, nuts, olives and
pickled beets, plus plenty of fun sips and snacks
