I
like pure organic
stevia in some applications (
like coffee and tea where you just need a bit), but it doesn't provide the right texture in this recipe, so it's important not to sub the maple with that without adding some other sort of liquid, which I haven't experimented with.
My favorite
stevia to use personally is Sweet Leaf
stevia in the liquid dropper here I
like this brand because it is
pure stevia, without any sugar alcohols or other sweeteners added.

stevia (combined with sugar alcohol and sold under brand names
like Truvia and
Pure Via), erythritol (a sugar alcohol derivative of corn) xylitol, brown rice syrup (and other syrups), high fructose corn syrup (made by treating starch extracted from corn with enzymes to make fructose and glucose)-- and if there's anything on a food label that you think might be sugar, google it.
To prevent this unpleasant aftertaste (often compared to a bitter, licorice -
like flavor) and create a
purer and sweeter product, Body Ecology opted to forgo standard
Stevia extraction methods and use an exclusive, proprietary extraction process instead.
I've been struggling with many recipes I've seen as we don't
like pure, dry
stevia.
To thicken these oats up a bit, I used ground chia seeds instead of whole (which adds a better texture, in my opinion), a touch of coconut flour to thicken it up and add a cake -
like texture (almond meal would also work), a little bit of vanilla, a dash of cinnamon, some NuNaturals
pure stevia (without any fillers — just
stevia), and finally, creamy non-dairy unsweetened almond milk.
I use NuNaturals brand
pure stevia extract in most of my recipes, but I realize that most people don't buy this form and many people don't actually enjoy it
like I do.

I also
like stevia because it doesn't mess with my blood sugar and isn't artificial, however, I definitely recommend using
pure stevia without fillers if you choose to do the same.
You could also use a little
pure maple strup instead of
stevia if you don't
like stevia.
Consider replacing your artificial sweeteners with natural sweeteners
like 100 %
pure stevia extract, raw honey, raw sugar or agave; these ingredients of nature also contain some basic nutrients.
