roasting them (which I love) I feel these dainty two - three inches nightshade gems deserve a more delicate approach.

Dave and I both tasted the just -
roasted eggplant mixture and decided we loved it just
like that and would serve it another day with rice or a chop sometime.

Other odds and ends — all in very small amounts of 2 to 4 tablespoons — in addition to the refried beans, Mexican rice,
eggplant, tortillas, and grilled bread included a more risotto -
like rice, caramelized onions (sort of fajita style), bronzed carrots (slices of carrot
roasted with blackening seasoning and brown sugar), green beans cooked with tomatoes and onion, very thick pureed white bean soup, about 5 sweet potato fries, a couple of artichoke hearts, a dab of
roasted red peppers, and half of a veggie burger made with black beans and corn.
When I recreated this salad at home, I looked to David Lebovitz for dressing inspiration, used my favorite pesto for the extra burst of drizzled flavor, and
roasted hella lot of
eggplant and tomatoes, because I
like my salads jam - packed with ingredients.
Eggplants when
roasted this way, develop a buttery flavor almost
like a vegetable custard contained in it's own skin.
OK, here are some favorites we've been cooking up at my place: - vegetable curry (grind my own whole spices, use whatever veggies we get in our weekly CSA share; radishes / beets,
eggplant, squash, greens, etc)- quick kale (sauteed with coconut oil, chili flakes, garlic, [lemon grass], soy sauce, lemon juice)- pac choi w / sauteed mushrooms «chinese» style (with fish sauce, rice wine vinegar, jalepeno / chili, soy sauce, etc)-
roasted radishes w / poached eggs - «teamwork pasta» — this is your recipe for pepper and cheese pasta, but it helps having two sets of hands to make it in our house... we put an egg on this too of course - tuna pasta (chopped onion, garlic, lemon zest, chili flakes, tuna, olives — easily adaptable to what you already have in the house and

When I was in Greece, I ordered it for dinner nearly every night, along with other mezze dishes

Add in
roasted veggies
like zucchini,
eggplant or mushrooms for added flavor and nutrients.
Before
roasting, I
like to shallow - fry the
eggplant and zucchini to soften them and start the process of caramelization.
Last weekend's at - home brunch creation included
roasted harvest veggies
like zucchini,
eggplant, and bell peppers topped with fried eggs.
Roast half inch thick slices of
eggplant (or zucchini) and fill them with a little cheese, some herbs, or whatever you
like.
I suggest
roasting the
eggplant, making the mashed potatoes, and maybe even cooking the lentils in advance, that way assembling the moussaka will feel
like a breeze.
But now that it's warming up I'm digging on rice noodle bowls
like this one, featuring
roasted barbecue
eggplant, asparagus, crispy mushrooms and a sunny spin on romesco sauce.
While your garlic and

I don't know about you but I've been hearing great things about a certain fat - free
roasted eggplant hummus from Trader Joe's for what seems
like years now... Unfortunately for me, there are no Trader Joe's in my area (Ontario, Canada).
